Figures 1 and 2 show the improved storage stability of chicken nuggets when Herbalox® Seasoning is added to the formulation. TBA values and sensory analysis were used to evaluate the extent of oxidative deterioration.
(TBA values greater than 1.5 are generally associated with meat flavor deterioration in poultry.) Using this as a guide, samples formulated with Herbalox® Seasoning in the marinade lasted about three days longer in refrigerated storage than those that did not contain Herbalox® Seasoning. Sensory scores correlated well with the TBA data.
