Specialty Chile Extracts
Overview
Chiles used to add flavor to food conjure up thoughts of pungent condiments like salsa and hot sauce or fiery foods like buffalo wings and jalapeno poppers. Without a doubt, the most famous aspect of the flavor of chiles is pungency.

Less notable, but equally important to Mexican, New Mexican, Cajun, and Tex-Mex cuisines, are the non-pungent flavors which specific varieties of chile impart to foods. This is particularly true in culinary creations like chile rellenos and mole which are "built around" chile.
